Already known in ancient China, Sichuan peppercorns combine citrus fruits and spiciness. They are ideal with fish, foie gras, chocolate, strawberries, or pineapple. Grind them finely right before serving – both delicate and floral, this berry will become bitter when heated to a high temperature.
