In the Danish Limfjord bay, the natural conditions are particularly good for “hjertemuslinger” (cockles). Here they acquire a mild, slightly salty taste and a firm meaty structure. Most of them are shipped to foreign kitchens. To preserve their delicate taste, only cold-pressed rapeseed oil has been added to these cockles.
