Limfjord blue mussels. Smoked over beechwood. In the cold waters of the Danish Limfjord, “blåmuslinger” (blue mussels) grow slowly to acquire a particularly fine taste and texture. Most of them are then shipped to foreign kitchens. These mussels are smoked over beechwood and preserved in cold-pressed rapeseed oil.
